Roast Pork Loin with Cola Glaze
(Makes 6 - 8 servings)

1 each 3lb boneless pork loin
2 liters Coke, 10 cloves garlic, crushed, 2 bay leaves, 20 black peppercorns, 1 large sprig rosemary
½ cup kosher salt
Heat 1 bottle coke with garlic, spice and salt until salt is dissolved. Add other bottle of coke, pour over pork loin and marinate for 8 – 12 hours.

.5 cup lightly packed sage leaves, .5 cup parsley leaves, 5 cloves garlic
fresh cracked black pepper to taste, .5 cup Dijon mustard, 1T olive oil
Process all ingredients in food processor until a smooth paste.

1 cup coke
.25 cup lime juice
2 cups packed brown sugar
2 medium jalapeno chilies, diced
Bring all ingredients to a simmer and cook over medium-low heat until reduced to about 1.33 cups or until thick and syrupy.

Directions

Remove pork from brine and pat dry with paper towel. Preheat oven to 500 degrees, place pork loin on wire rack over roasting pan and cook/sear pork loin for 15-20 minutes. Turn heat down to 250 degrees, brush spice rub all over loin and cook for 30 minutes. Start basting pork with glaze and cook until internal temperature of 150 degrees. Let rest, slice and serve
