Honey Grilled Quail Salad
(Serves 6)

6 each partially boned quail
2 cups apple juice
1 oz. kosher salt
1 tsp. pepper
1 oz. honey
1 oz. brown sugar
1 T pickling spice
4 cups mixed field greens
1 apple, sliced
3 oz. Dijon vinaigrette
1 cup 1yr. Aged Manchego, shaved
½cup grapes, sliced

Directions

1. Whisk together apple juice, salt, pepper, honey, brown sugar and pickling spice. Marinate quail overnight.

2. Grill quail until done, approximately 4 minutes per side.

3. Mix greens with vinaigrette, apples and grapes. Place on plate, arrange shaved Manchego and then quail on top.
