A la Minute Cod Chowder
(Serves 6)

6 each 6oz. thick cod fillets
sea salt and fresh cracked pepper to taste
¼ lb. bacon, diced small
1T butter plus 4T for finishing
2.25 cup diced onion
1.25 cup diced peeled celery
¼ cup dry white wine
2 cups fish stock
1 bay leaf and 1T fresh thyme
3 cups diced peeled potatoes
1 cup heavy cream
3 cups whole milk
3T minced parsley

Directions

In a 4-5 qt. soup pot, render the bacon in 1T butter, add onions and celery and sweat covered until tender. Add white wine and reduce dry. Add stock, bay leaf, thyme and potatoes and simmer partially covered until potatoes are tender. Add heavy cream and cod fillets and simmer very low, partially covered until cod is cooked, about 10 minutes. Place cod fillets in warmed soup bowls, add milk and bring to a simmer. Stir in remaining butter and parsley and pour over cod fillets and serve with crusty, warm bread.
